The Sweet Potato Pie Cupcake is a special 2021 holiday treat! This cupcake is not usually available, and I had the privilege to taste it this past weekend. The Sweet Potato Pie Cupcake has a fantastic cream cheese frosting with pie crust nestled in the frosting. The frosting is not too sweet, which is a bonus, as I prefer desserts that are not overbearing. The cake portion of the cupcake has beautiful morsels of sweet potato in a puree fashion. The spices are just right in this cupcake as well; some places overdo it with spices in their pumpkin or sweet potato desserts. I highly recommend trying this cupcake as well as others available at Courageous Bakery. I have previously tried the Strawberry Shortcake Cupcake and the Banana Cream Cupcake. Between the latter two, I particularly enjoyed the Banana Cream. Other flavors for the cupcakes include French Silk, Cookies and Cream, Peanut Butter Chocolate, and more! I
