I have previously seen tacos with falafel in their list of daily specials. I have not tried this particular one, but I think it is wonderful that the leadership strives to offer diverse vegetarian options. I appreciate their creativity.
Their salsas are amazing and scrumptious! I really like the avocado salsa and the jalapeño salsa. They usually have five or six salsas available, and you help yourself to whichever ones you are adventurous enough to try! It helps to have an open mind and be willing to try their diverse foods and salsas. After all, the whole point of going out to eat is to try something new and exciting.
I typically am not a huge advocate of chains, but I also really like Cilantro, which has multiple locations like Taco Maya. Cilantro and Taco Maya differ in that Cilantro offers more mainstream tacos and has far fewer vegetarian options. Cilantro is also distinct in that it does not offer gourmet and specialty tacos. At least that is my impression of their menu. I, however, love Cilantro and appreciate steak tacos, chicken tacos, as well as their cecina tacos. I am crazy about cecina. I recently learned that folks from Puebla in Mexico have some of the best cecina. I am unsure about the exact geographic background of the owners of Cilantro, and Cilantro is more of a fast-food establishment, but I can say that their cecina is pretty darn delicious for fast food.
